L-carnosine (l-alanyl-l-histidine) is a crystalline solid dipeptide consisting of two amino acids, beta-alanine and l-histidine. Muscle and brain tissue contain high concentrations of carnosine. Carnosine is a substance that was discovered with carnitine by the Russian chemist gulevich. Studies in Britain, South Korea, Russia and other countries have shown that carnosine has strong antioxidant capacity and is beneficial to human beings. Carnosine has been shown to scavenging reactive oxygen radicals (ROS) and alpha-unsaturated aldehydes formed by excessive oxidation of fatty acids in cell membranes during oxidative stress.
